I used a very ripe Maradol Papaya which is a Mexican Papaya. This type of papaya is very red when opened up and very soft and juicy.
1 cup of ripe papaya
1/2 frozen banana
a small knob of fresh peeled ginger
1 sprig of mint (leaves only)
1/2 cup of non-dairy milk
Put all the ingredients into a blender and puree til smooth and creamy.
Garnish with a couple of mint leaves.
